One of the three most popular varieties of rice grown in Hokkaido prefecture, Nanatsuboshi is named after the Big Dipper constellation. It has a nice balance of sweetness and stickiness, while retaining a little bounce, or springiness. These qualities make it suitable for serving both hot and cold.
